Green Mapo Tofu

Chop the green peppers and set aside (for those who like to eat spicy pots, you can use Erjingtiao instead of ordinary green peppers and add some pickled sansho pepper).

Chop the coriander stalks and set aside.

Reserve the tofu and cut into pieces for later use (it is best to cut with a ceramic knife to avoid the rusty smell of the tofu).

Sprinkle a little salt on the tofu cubes in a pot under cold water (be careful not to spoil the tofu).
