Green Radish Buns

Prepare the materials

First rise the noodles, combine flour, water and yeast into a slightly softer dough, cover with plastic wrap or other containers, and ferment indoors.

Prepare the radishes in the space between the dough, wash the green radishes and rub them into silk, and use the bed to save trouble.

Boil a pot of boiling water, add the shredded green radish to blanch water, boil for a while after boiling, until it is broken.

Take out the shredded radish in cold water, the purpose is to remove the spicy flavor of the radish, remove the half-dried and set aside.

Dice pork belly, add cooking wine, scallion and ginger, light soy sauce, salt, vegetable oil and mix well. Cut green radish with a knife a few times. Don’t chop too much. If it’s for dumpling filling, chop the radish and put it in a bowl. Stir the diced meat, put the chopped radish on the side, and season it with sesame oil before wrapping.

The filling is ready and the noodles are fermented in place.

Take out the dough and knead it smoothly, cut it into an appropriate size dough, and roll it out into a thin bun skin with a thicker middle in the middle.

Put sesame oil and a little salt in the filling and mix thoroughly,

Take the right amount of stuffing and knead into buns.

Put corn husks under the prepared buns and place them in a steamer. Put enough cold water in the steamer in advance, cover the pot and let it stand for 10 minutes. After proofing, use low heat to start steaming, and then turn to high heat to steam for 10-15 minutes. Open the lid immediately after turning off the heat to avoid dripping from the lid of the pot on the buns.

The hot steamed buns just out of the pot, take a bite and scent, with a bowl of porridge or corn batter, a comfortable meal.
Tips:
Green radish has a strong spicy flavor. Use it as a filling. It’s best to cook it (zha) first. When it is overheated, it can’t be blanched and then fished out. It must be boiled until there is no raw flavor, otherwise the radish flavor will still be strong. Turnip hiccups won't happen immediately, and turnip farts are still indispensable.
