Grilled Eggplant with Minced Meat (less Oil)

Cut the pork into minced meat, because it is mainly eggplant. It doesn’t matter if the meat is less, because I prefer to be vegetarian, so you can add more when making it.

Warm the pan with cold oil, stir-fry the meat (the oil becomes clear and there is no steam)

Pour the eggplant and stir-fry together, add salt, light soy sauce (a bit too much, the color is not so good)

Stir-fry for a while and add water until the eggplant is just over

So much cornstarch, it melts in warm water, but I don’t seem to have used it up, it looks like half

When the water is almost dry, add starch juice, and stir while adding to the consistency to your liking

Tips:
In the process of making soy sauce and dark soy sauce, I have a little overdone, which is less attractive. But it's really delicious! It’s also great to make rice bowls! Finally, you can sprinkle some chopped green onions.
