Grilled Flat Fish with Dried Plums and Vegetables

Soak the dried plums in boiling water, rinse, remove, drain, and chop.

Remove the scales, gills, and internal organs of the flat fish. After washing, use a knife to make a diagonal grid of knives on both sides of the fish body; heat the oil in the pan to 70% heat, and fry the flat fish until both sides are yellow.

Heat a little oil in another pot, sauté the scallions and ginger slices, and cook into the cooking wine.

Immediately add soy sauce, sugar, salt, dried plums, appropriate amount of broth, bring to a boil, boil for about 5 minutes.

Add flat fish and cooked lard, cover and turn to low heat for 10 minutes.

When the fish is tender and mature, turn to high heat to collect the juice.

Collect the soup until thick, pour in sesame oil and sprinkle a little chili.

Put the fish and dried plums on the plate, and pour the soup on the fish.
Tips:
1. Flat fish: Avoid deep-frying flat fish with animals; do not eat with mutton.
2. Plum dried vegetables: Avoid eating moldy dried vegetables with lamb, otherwise it will cause chest tightness.
