Sea cucumber, one of the "eight treasures of the sea", has a glutinous taste, delicious taste and rich nutrition. It is a good delicacy for banquets. Grilled Sea Cucumber with Green Onions

1. Cut the sea cucumber into large pieces; cut the scallion into about 5 cm pieces, and shred the ginger

2. Pour cold sea cucumber water into a pot, boil over high heat, and boil for 5 minutes; remove and drain the water for later use

3. Add lard in a small pot, add green onion when it is 50 or 60% hot, fry slowly on low heat until golden brown, turn off the heat; remove the green onion and set aside for use.

4. In a separate pot, add ginger, salt, cooking wine, soy sauce, sugar and chicken broth, bring to a boil on high heat; add sea cucumber

5. Add the shallots; bring to a boil again, turn to low heat, and simmer for 2-3 minutes

6. Turn to high heat, add a small amount of water starch (about 1 tablespoon) several times to thicken, turn to medium heat and boil thoroughly to collect the juice; pour in shallot oil and turn off the heat
