Grilled Silver Carp

Cut the silver carp clean and cut into two (because my pot is too small, if you have a big pot, you don’t need to cut it)

Half of the green onion, ginger and garlic, chopped

Put the cleaned fish in a basin, cut it with a flower knife for easy taste (I forgot to cut...) Pour in soy sauce, cooking wine, pepper, green onion, ginger and garlic, massage for a while, and marinate for about half an hour

Put peanut oil in the pot, add dried chili and salt when 80 to 90% of the heat is hot

Add the fish and fry for a while until the fish is slightly whitish

Add raw spring onion, ginger, garlic, aniseed, sugar, and soy sauce for pickled fish

Pour in a bottle of beer, cover the pot and bring it to a boil, turn to a low heat and simmer slowly, turning the noodles once in the middle

Until the soup thickens, sprinkle with green onion leaves to serve
