There are many ways to make three cups of duck. Our Hakka method does not use any seasonings and spices. The old hemp duck is used. The meat is firmer and not too fatty. It is added with good light soy sauce and homemade Hakka rice wine. Another cooking point is to lift the duck and rub it back and forth on a hot pan with a little oil, so that the cooked duck is not greasy, and the color is also very beautiful.

Hakka Three Cup Duck

1. Clean up half of the duck

2. Prepare 120ml each of rice wine, light soy sauce, and water

3. Cut ginger, green onions, prepare rock sugar

4. Heat an appropriate amount of oil in the hot pan until 70% hot, and rub the duck back and forth on the hot pan to fry the duck surface until golden

5. Add the three cups of ingredients from step 2

6. Add rock sugar

7. Add shredded ginger, bring to a boil, cover and turn to medium heat and cook for 15 minutes

8. Pour the juice on the surface of the duck halfway to make the taste and color even

9. Add the green onions, turn the duck over, cover low heat and cook for 15 minutes

10. After cooking, there is about half a bowl of juice. Cut the duck into pieces and pour the juice on the surface.

Tips:

1. To make three cups of duck, use light soy sauce. Light soy sauce is salty, so it tastes just right when cooked. Add some salt if necessary.
2. If the whole duck is made, double the amount of three cups, and the cooking time for the whole duck is about 50 minutes.
