Hand-made Noodles "sesame Leaf Mixed Noodles"

First soak the dried sesame leaves in warm water for 30 minutes to wash, add a spoonful of salt and a spoonful of sesame oil and mix well.

Cut half a radish into strips.

Put oil in the pan, pour the radish and stir fry a few times, pour the flour in a small bowl, mix with the radish and fry until browned (leave it in the pan).

Mix a bowl of wheat flour and half a bowl of soy flour to make the noodles, and about half a bowl of water.

Sprinkle with flour and roll up the dough to thin slices

Tips:
1: Put as little water as possible when kneading the dough, so that the dough is best not hard or soft.
2: Roll the dough into a round sheet and then roll it on the rolling pin and shake it back and forth until it is rolled into a thin sheet, so that the noodles that come out are very chewy.
3: When cutting, sprinkle more flour on the dough to prevent the strips from shaking after cutting.
4: The noodles taste better with some chili sauce.
