Hand-rolled Noodles

Prepare 500 grams of flour. I use Russian flour. Rolling noodles is more vigorous.

Add salt and noodles to the flour. Warm water to mix the noodles. I put the noodles in the water and melt the noodles. Many friends think that the noodles get the noodles first. I use chopsticks to stir first. After it becomes cotton-like, I use my hands. Knead the dough until smooth.

After kneading the dough. Cover the dough with a damp cloth. Wake up for 2 hours (I was in a hurry this morning. I didn't wake up for that long). Knead it once every 20 minutes or half an hour.

Wash the meat during waking up. Remove the skin. It doesn't matter if you bring a little less fat. Cut the fingers into thick pieces and set aside.

Finish the minced meat. Dice the shallots and mushrooms and set aside.

Stir-fried meat sauce during the waking up period. The meat sauce I used today was fried with seafood soy sauce. According to personal taste, it can also be fried with bean paste or sweet noodle sauce. You can also add a little five-spice powder.

After the dough is awake, roll the dough. Note: When you change the direction of the dough, you should drizzle the flour to avoid adhesion.

Cut noodles. Choose the thickness according to personal preference.

After cutting the noodles, pick up one end. If you don't cook it immediately, drizzle a little flour on it to avoid sticking.

Boil the noodles in water. Cook for 3-5 minutes. Fill a bowl. Cover with meat sauce. Put coriander. Finish!
