Hang Jiao Beef Tenderloin

Cut the beef into strips horizontally (this will cut the long fibers and make it easy to taste and chew), mix well with cooking wine, soy sauce, salt, baking soda, starch and a tablespoon of cooking oil and marinate for 15 minutes.

Remove the head and tail of the Hangjiao pepper with a knife to loosen it. Remove the seeds and tendons of the red pepper and cut into shreds for later use.

Heat the pan, add more oil, add the beef tenderloin and spread it with chopsticks.

Stir-fry until the beef changes color, then serve and set aside

Heat in another wok, pour in cooking oil, add green onion, ginger, garlic and stir fragrant.

Pour in Hangjiao and stir-fry until broken

Finally, add beef tenderloin, add a teaspoon of sugar, a pinch of salt, cooking wine, and a tablespoon of oyster sauce and stir well.
