Lotus Pond Xiaochao is a traditional special dish in Guangdong Province. Cantonese cuisine is very particular about the color and nutrition of the dishes, and vegetarian dishes are no exception. The name of the dish of Lotus Pond Xiaochai is that the yam and lotus root in the ingredients are all grown in the soil. In fact, my understanding of the lotus pond stir-fry is that the main ingredients are best grown in water, isn't it more appropriate? This dish is a seasonal dish, after the season, you can only use the frozen ingredients in the refrigerator. "

Ingredients

Hawthorn Fry

1. The fresh lotus seeds that I bought before, remove the lotus heart and freeze them in the refrigerator.

2. Tear off the tendons on both sides of snow peas and wash them.

3. Wash the fresh chicken head rice and freeze it in the refrigerator.

4. Cut the lotus root into thin slices, put it in water, and add some white vinegar to prevent discoloration.

5. Boil the chicken head rice and lotus seeds first and remove them for later use.

6. Then blanch the lotus root, snow peas, and black fungus in water and remove the water to drain.

7. This is Chuhaoshui's ingredients.

8. From the frying pan, add the carrot slices and stir fry.

9. Then add lotus root slices, snow peas, black fungus and stir well.

10. Add chicken head rice and lotus seeds and stir well.

11. Add some salt and stir well.

12. Add some chicken noodles and chopped green onion before cooking.

Tips:

Except for the carrot slices, all other ingredients are blanched so that they can mature quickly when fried. The ingredients inside can be adjusted by yourself, but you must have lotus root. I personally think that the color combination of snow peas and carrot slices looks good and delicious!
