Home-cooked Noodles

1. Prepare buckwheat flour and wheat flour in a ratio of 7:3. After mixing well, add water in portions, stir first into snowflake noodles and then into grape noodles.

2. Finally, live into a slightly soft dough and cover with wet cloth for 40 minutes.

3. There is no tool for pressing glutinous noodles at home, so I used a noodle machine to make thicker noodles.

4. Prepare raw materials for glutinous rice noodles. Soak the black fungus for 12 hours in advance, blanch them, and tear them into pieces. Remove the thick skin of the green bamboo shoots and shred them. Slice the straw mushrooms.

5. Heat the pan with cold oil, sauté the chives and green garlic.

6. Add straw mushrooms and stir-fry evenly, add salt and light soy sauce to taste, set aside.

7. Put the noodles in the boiling pot on the heat, add the noodles after the pot is boiled, tap cold water once, and then remove it after boiling.

8. Take out the noodles, add the noodles, black fungus, and green bamboo shoots.

9. Put on the chopped pepper sauce.

10. Just mix well.
