Home Cooked Yellow Croaker

Prepare the ingredients. Remove the gills and internal organs of yellow croaker, and rinse.

Cut 2 knives on each side of the yellow croaker (to break the skin), marinate for a while with cooking wine, salt, and white pepper; peel the garlic and cut in half.

Put vegetable oil in the wok, the oil temperature is 50% hot, add the marinated yellow croaker, and fry the yellow croaker on both sides; add the balsamic vinegar along the side of the pan.

Cover the pot and simmer for about 20 seconds.

Add appropriate amount of boiling water, add star anise, pepper, sliced ginger, green onion, cooking wine, sugar, and a pint of fresh soy sauce. Change the heat to medium and small, cover the pot and cook.
