Home-made Clear Soup and Soy Yan

Prepare the ingredients. Remove the roots of the soybean sprouts and wash the shiitake mushrooms into small flowers.

Bring water to a boil in a pot, add soybean sprouts, shiitake mushrooms, scallops, etc., and bring to a boil again, reduce the heat to a low heat for 40 minutes.

Cut white radish into thin strips.

Soak the shredded radish in light salt water for 10 minutes.

Take out the shredded radish and drain it thoroughly, put it in a bowl, sift in the flour, gently grasp it with your hands, do not stir vigorously to prevent uneven batter.

Boil water in a pot, add shredded radish to cook, remove and throw into warm water.

Remove and put into the bowl.

Put the boiled plain soup into a pot and boil.
9.
Pour the hot broth into a bowl of shredded radish.
10.
Add salt, drizzle sesame oil, and garnish with medlar and coriander leaves.
Tips:
Flour can be replaced by starch.
Adding winter vegetables to the clear soup tastes better. I haven't bought it yet. Add some scallops to improve the flavor.
