Homemade Boiled Shrimp

1 kg of fresh sea prawns as shown in the picture, wash and set aside

Use a toothpick to pick out the shrimp floss. The toothpick can be inserted from the penultimate section of the tail, or from the junction of the shrimp head and the shrimp body.

Cut the green onion and ginger slices, prepare the pepper

Add appropriate amount of water to the pot, add green onion, ginger and pepper, then add salt and two spoons of cooking wine, bring to a boil

After the water is boiled, add the processed shrimps. After the water boils again, cover and cook for 1 minute to pick up. Don't cook it too old. Note: Boiling the pot under water can instantly seal the shrimp's flavor and keep it cool. The umami flavor of the pot is boiled into the soup

Serve out of the pot and garnish with coriander

Cut some minced ginger and coriander into a small bowl

Add 2 spoons of light soy sauce and 1 spoon of rice vinegar, add a few drops of sesame oil and stir well to make a dipping sauce, and serve with shrimp for dipping
Tips:
1. Shrimp must be bought live to taste good;
2. Be sure to remove the shrimp thread, otherwise the teeth will be blocked;
3. Boiling the pot under the water, the cooking time must not be long, the shrimp meat will not taste good when it is old.
