Homemade Braised Pork Knuckles

Prepare a pig's knuckles (bare it with a musket when buying meat, remove the hair and chop small pieces), go home and clean it!

Prepare the seasoning, just cut a piece of ginger and shoot with a knife

Wash the trotters in a pot under cold water (put two slices of ginger and star anise, a little cooking wine to remove the smell) must be cold under the pot, so that the blood can be removed, turn to medium heat and turn to high heat, remove, and wash the blood foam for later use.

I use a pressure cooker to press first, put the trotters into the pressure cooker (you can also use a wok, use a low heat, for a longer time), add light soy sauce, dark soy sauce, cooking wine, a piece of ginger, and a spoonful of sugar to the pot in turn. Marinate for about ten minutes (turn over during the period)

After marinating, add cold water to submerge the meat. Pressure cooker can be used for 15-20 minutes, and you will have to return it to the pot later! (It will rot if it takes too long, and it is easy to lose the bone) Time should be mastered.

After pressing the soup, there is still some. I set up another wok and heat up the juice. This is how you can taste it. According to your taste (you can add salt or pepper appropriately), I have a child in my family. I didn’t put any pepper but added shiitake mushrooms.
