Homemade Chicken Floss

Wash the chicken breasts and set aside.

The selected chicken breast has almost no fascia, so just cut into pieces along the texture of the chicken.

Prepare green onion, ginger, garlic, bay leaves, star anise, peppercorns, white sesame seeds, pepper powder, and salt and pepper.

Bring the water to a boil, and blanch the chicken.

Remove and wash away the foam.

Pour into the inner pot of the pressure cooker, add the green onion, ginger, garlic, pepper, star anise, bay leaves, and pour the cooking wine.

Close the lid to start the switch, select "Chicken and Duck" in the ingredient mode, and press START to enter the "Soup" mode.

Start preparing the seasoning sauce: add 1 tablespoon of sugar, 1 tablespoon of light soy sauce, a little dark soy sauce, and appropriate amount of sesame oil to the bowl and mix well.

The chicken is cooked and drained.

Put it into a fresh-keeping bag and beat it a few times with a rolling pin,

Put it in the dish, shake it off with your hands a few times, and then it will be very loose.

Then add the bread machine liner.

Add white sesame seeds. (I used the fried white sesame seeds)

Then add the prepared sauce.

Close the lid to start the switch and select the "Jam" function. Press the start key. The jam function of my bread machine is 1:05. (According to the amount of time, the time can be extended or reduced as appropriate)

Add appropriate amount of pepper powder and salt and pepper in the last 20 minutes. (Can also be omitted)

When the time is up, take it out and put it in a baking pan supplemented with greased paper and let it cool.

Put it in a sealed box and put it in the refrigerator.
Tips:
1. The chicken breast is best cut into pieces along the texture. 2. The chicken breast is easy to fall apart if it is rotten in a pot, and the meat will be fluffy. 3. Put less soy sauce, just a few drops, otherwise the finished pork floss will be too dark. 4. Homemade chicken floss has no additives and should be eaten as soon as possible.
