Homemade Cold Skin

Prepare 300g of flour and 150g of water, mix them evenly and knead into a dough. Then put the lid on and ferment for an hour~

Put clean water in the fermented dough and knead the dough continuously. Put the milky white into another basin and set aside. I continued to knead with water repeatedly, and finally got a yellow honeycomb gluten.

Put the kneaded gluten into a steamer and steam it~

Leave the milky white liquid to rest overnight so that the batter can layer with the water.

Skim out the still water and the water in the batter solution, leaving the batter.

Spread the batter evenly into the pan and steam it in a steamer. Because there is a lot of batter, it can be steamed several times~

Cut the gluten into pieces for later use

Cut the cold skin into strips

Cut cucumber into shreds

Put the ingredients together

Use sesame sauce, soy sauce, vinegar, and cumin to make a juice

Put the mixed juice into the ingredients and mix well, because there is sesame sauce in it, which is relatively dry. Later, I added some water to make the noodles not so dry~
