Homemade Cold Skin

Add a small amount of salt to the flour. After mixing evenly, add appropriate amount of water to form a snowflake shape, and then knead into a dough.

Cover the kneaded dough with a lid for 30 minutes.

Add water to the good dough, and the amount of water is less than the dough, and then rub the dough repeatedly with your hands. Until the flocculent gluten is washed out.

Filter out the gluten. Then put it in clean water to wash, and then filter, repeat 3 times.

While washing the gluten with water to remove the starch on it, knead it into a picture by hand. Then, steam it in a pot, and after the fire is boiled, steam for 20 minutes.

The washed starch is allowed to stand for 2 hours, pour off the clear water layered on it, leave the white slurry, and stir evenly.

Boil water in a steamer, turn to a low heat when the water is boiled and set aside. Prepare a disc, brush it with oil, then add a spoonful of starch slurry, after spreading, put it in a steamer, turn to high heat, cover with a lid, and steam for 2 minutes.

After 2 minutes, take out the disc. After cooling, you can take out a piece of Liangpi. So repeated production.

Cut the steamed gluten into cubes.

Shred the cucumber.

Tahini should be boiled loosely with warm water, and the water temperature should be warmed up, otherwise it will not be loosened.

Put an appropriate amount of oil in the pot, add a few peppers, and fry slowly.

After the oil is hot, remove the pepper and pour the oil on the chili powder.

Add minced garlic, salt, soy sauce, sugar, white vinegar, and chili oil to the sesame paste and stir well.
