Homemade Egg Fried Rice

There is a bowl of leftover rice, and the yellow one is millet.

Beat the eggs one by one.

Finely chop the shallots.

Heat the pan, pour in a suitable amount of oil, and lay the egg liquid. Before the egg liquid is completely solidified, use a spatula to shovel the eggs into small pieces.

Put the scrambled eggs in a bowl first.

Pour leftover rice into the pot and heat up, then use a spatula to squeeze the rice balls.

After the rice is fried, add the eggs and stir fry a few times.

Pour in a tablespoon of light soy sauce and stir-fry evenly.

It's almost done, turn off the heat, sprinkle chopped green onion, and stir-fry evenly with the remaining heat.

A bowl of fragrant egg fried rice is ready.
Tips:
1. Fried rice with scrambled eggs is best leftover rice from the day before, so dry, fresh rice has too much moisture to fry.
2. Fried eggs first and then fried rice. This kind of egg comes in pieces. When I was young, my favorite was a large piece of egg in the rice. It's okay to fried rice first and then add egg. There is nothing to argue about, everyone likes it.
