Homemade Eggplant with Minced Meat (panlong Eggplant)

I use my own eggplants, which are all crooked melon and split dates, so I use a lot of roots and cut them into the shape shown in the picture. A good way is to take a chopstick and really want to cut it off;

Tips:
Remember to put some salt on the eggplant before frying.
