Homemade Hot and Sour Potato Shreds

Wash and peel potatoes

Cut into shreds, soak in clean water, rinse repeatedly several times, remove and control dry

Add base oil, pepper, and dried chili to the pot, stir fragrant, remove

Add potato shreds and stir fry
5.
Add a little salt, sugar, and 1 tablespoon of white vinegar, stir fry until the potatoes are broken and slightly soft.

Add another dried chili and break it out (the side dishes look good) and take it out of the pot

Tips:
Potatoes must be soaked to avoid oxidation and blackening, and some starch can be removed.
