Homemade Pickled Cucumbers

Prepare the ingredients, wash the cucumber, remove both ends, cut into sections for later use

Pour the soy sauce into the pot

Pour in white vinegar

Put the yellow rock sugar and red pepper into the pot and cook until the rock sugar melts

Stir the sauce evenly and put in the previously prepared cucumber segments

Cook until the surface of the cucumber turns yellow, then turn off the heat and put it in a water-free airtight jar for one day.
Tips:
1 The small cucumber used here is a variety called fruit cucumber. It has a thin skin and a crispy taste. It is just right to make pickled cucumbers.
2 I put a lot of rock candy here. If you don't like too sweet rock candy, you can reduce it to about 130G.
3 If there are friends in the family, white vinegar can also be replaced with apple cider vinegar. This taste may be better.
4 The cooked pickled cucumbers must be put in a jar and sealed for one day, so that the taste will follow. It is recommended to store the jar in the refrigerator in summer.
