Hometown Version of Potato Pancakes

Wash the potatoes and steam them in a steamer

Peel while it's hot

Turn the pot on a low heat (just a little bit hot) and mash the potatoes with a spatula

Then add starch and salt

Stir fry evenly

Pinch a small ball to see if it can be formed. It should not be too dry or too wet, and it can be formed.

Pinch out into a rectangular shape

Cut into 5 cm width

Add oil to the pan and heat it up, then put the potato cakes on low heat and fry slowly

Fry until the surface is golden, turn it over and fry
11.
Both sides are fried to golden brown and ready to be out of the pan

Eat it hot, it won’t be so fragrant when it’s cold
