This is a dish that I often ate when I was young. I can't eat it outside after I come out. Only when I go home in the New Year can I eat potato cakes made by my mother. Now I have learned with my mother, I can make it myself if I want to eat it in the future.

Hometown Version of Potato Pancakes

1. Wash the potatoes and steam them in a steamer

2. Peel while it's hot

3. Turn the pot on a low heat (just a little bit hot) and mash the potatoes with a spatula

4. Then add starch and salt

5. Stir fry evenly

6. Pinch a small ball to see if it can be formed. It should not be too dry or too wet, and it can be formed.

7. Pinch out into a rectangular shape

8. Cut into 5 cm width

9. Add oil to the pan and heat it up, then put the potato cakes on low heat and fry slowly

10. Fry until the surface is golden, turn it over and fry

11. Both sides are fried to golden brown and ready to be out of the pan

12. Eat it hot, it won’t be so fragrant when it’s cold
