Honey Fried Chicken Wings

Ingredients: 8 fresh chicken wings

Accessories: pepper, star anise, green onion, ginger, garlic, cooking wine, honey, salt

First, after the chicken wings are cleaned, scratch the chicken back twice. This will help to remove the blood and make the pickling more delicious.

Put the chicken wings soaked for more than two hours into a basin, and pour about 1g pepper

Cut some green onion and put it in the chicken wing pot

Put in a few pieces of ginger

Chop the garlic into garlic rice and put it in the chicken wings

Add 4g salt

5g of cooking wine, put on disposable gloves and grasp well, cover the mouth of the pot with plastic wrap, put it in the refrigerator and marinate for more than 6 hours

Take out the marinated chicken wings, pick out the seasonings and throw them away

Put oil in the pot, add the chicken wings when 80% is hot, and fry slowly on low heat. Part of the oil will be produced during the frying process of the chicken wings, so there is no need to add too much oil at the beginning

Fry on one side for two minutes and then turn over again, turn over every two minutes or so in the middle and continue to fry until golden on both sides

Take a bowl and pour honey, add a little water to make honey water

When the chicken wings are fried for 16 minutes, brush both sides with a layer of honey and fry for two minutes

After frying for 18 minutes, the chicken wings will be cooked. Be sure to low fire, don’t fry on high fire. High fire is easy to batter but not cooked.
Tips:
1. Be sure to fry on low heat, turning under every two minutes or so
2. The marinated chicken wings must be dried on the kitchen paper, otherwise the oil will be splashed during the frying process
3. Soak chicken wings to remove the fishy smell, change the water frequently, soak more, at least one hour is better
4. The honey should be added in the last two minutes or so, not too much, just a thin layer
