Hot and Sour Cowpeas with Garlic

Wash the cowpea and remove both ends.

Boil water (add 3 grams of salt, 3 drops of oil) and cook.

After removing it, soak in cold water.

Dice garlic, ginger, and shallots.

Scoop out the cowpea, cut into pieces and place on a plate. Can be as long as you like.

Adjust the sauce: light soy sauce, vinegar, chicken essence and the remaining salt, then add 20 ml of water and mix thoroughly.

Heat up a wok, add oil, chili, star anise and pepper, stir fry until fragrant.

Tips:
Boil the vegetables with low salt and they must be cooked well.
