Hot and Sour Cucumber Roll
1.
The cucumber is cleaned. (Try to choose tender cucumbers of uniform thickness. Old cucumbers will have fruit, which will affect the taste.)
2.
Scrape long thin slices with a flaker.
3.
Slightly push down when scraping.
4.
Take two pieces and stack them together. One end is staggered, and the bottom piece is longer, because the ends are not inconsistent when they are rolled.
5.
Press tightly to roll up.
6.
When rolled to the end, the length of the two pieces is exactly the same.
7.
Do them one by one and put them on the plate.
8.
Sauce: 8 grams of garlic mashed, 20 grams of white vinegar, 5 grams of light soy sauce, a little salt, a little chicken essence, 20 grams of boiled water, a few drops of sesame oil, mix and stir evenly.
9.
Add appropriate amount of chili oil. (If you don’t like spicy, you can ignore it)
10.
Pour the sauce into the cucumber rolls.

Tips:
1: Choose cucumbers with well-proportioned thickness and thorns. If the thorns on the cucumber skin are small and dense, and they will break when touched, this kind of cucumber will be more tender and delicious. Those cucumbers with large and sparse thorns do not have a cucumber taste. If there are no thorns, the cucumber is old.
2: Gusty-shaped melons with big belly, pointed head and thin neck are the cucumbers that are underdeveloped or have been stored for a long time and become old, and there are more cucumber seeds with big belly. If the melon strips and melons are wilted, they will be stored for a long time after picking.
3: Fresh green melons are tender melons, and yellow or nearly yellow melons are old melons. Don't be too big. Cucumbers that are too big are not delicious. Relatively small cucumbers are tender and taste better. Pinch the cucumber with your fingernails, it feels crisp and tender, and the cucumbers with moisture coming out are more tender.
4: Cucumbers with top flowers are not necessarily fresh, or they may be smeared with chemicals. In fact, in a normal mature cucumber, the top flower will fall off naturally, and the top flower will shrink and leave a scar. If the nodule protruding from the top of the cucumber looks like a small hat, it is obviously coated with gibberellin. Its typical feature is that there are obvious small bumps at the junction between the flower bone and the flower bud. The top of naturally growing cucumbers should be naturally streamlined. Do not buy cucumbers with obvious nodules on the top.
