Hot and Sour Pea Jelly

One pack of pea starch, one spare from Locke Glass.

Pea starch 80ml, water 80ml, soak pea starch in water for 15 minutes.

Pour 400ml of water into the pot.

Bring the water to a boil, then add the starch water. Heat on a small fire, stirring constantly until it becomes transparent, and there are bubbles in the pan.

Pour the boiled batter into a container, and put it in the refrigerator after cooling.

Mince garlic.

Mix with garlic, light soy sauce, shrimp oil, salt, sugar, vinegar, chili oil and other condiments according to your own taste.

Take out the refrigerated pea flour and buckle upside down.

Cut into pieces, or shred.

Shred the cucumber and put it in the bottom of the bowl.

Shredded pea flour, covered with cucumber.

Just drizzle with the mixed sauce.
