Hot and Sour Potato Chips

Prepare a potato.

After peeling the potatoes, cut them into thin slices, soak them in a basin and rinse them repeatedly to remove starch. This is the first step to make potato slices refreshing and crispy.

Blanching potato chips in a pot of boiling water (not boiled) is to make the potato chips transparent and bright during the blanching process.

Rinse in cold water after removal (this step is very important to keep the crispy texture of the potato chips when they are in the mouth).

Drain the water and put it on a plate. Sprinkle with chopped green onion, garlic, salt, chili noodles, white-cooked sesame seeds, and top with light soy sauce, balsamic vinegar, and sesame oil.

Raise the pot and burn the oil.

Pour the hot oil on the center of the plate (be sure to pour it on the spicy noodles, this is the key to the aroma of the boiled spicy noodles).

Stir well and serve.
