Hot and Sour Potato Shreds

Peel the potatoes, shred them, and soak them in cold water.

Shred the ginger, slice the garlic, and chop the spicy millet for later use.

Warm oil in a pan, add chili garlic and ginger and saute until fragrant.

Add potato shreds and stir fry.

After stirring for two minutes, add white vinegar, continue to stir, then add other condiments in the ingredients, and finally, add chicken essence, turn off the heat and bring out the pot.
6.
Hot and sour potato shreds, serve.
Tips:
After the potato shreds are cut, be sure to run through cold water to wash off the starch so that the potato shreds will be crisp. Be sure to stir fry quickly on medium-high heat, otherwise the potato shreds will taste bad.
