Hot and Sour Potato Shreds

Peel the potatoes and cut into shreds.

After the potato shreds are repeatedly rinsed off the epidermal starch in clean water until the water is clear, continue to soak in clean water (add a spoonful of white vinegar in clean water, outside the ingredients)

Soak the dried red pepper in warm water for five minutes in advance, cut into small pieces, shred the green onion, and slice the garlic.

Put oil in the pot and stir-fry the peppercorns on low heat until the peppercorns turn brown and black. Remove the peppercorns and discard them.

Add the dried red pepper and green onion and continue to stir-fry for a fragrance.

Turn to high heat, pour in the drained potato shreds, stir fry quickly, and add a spoonful of white vinegar at the same time.

Add salt and sugar and continue to stir fry.

Finally, add garlic and the remaining 1 tablespoon of white vinegar and stir-fry evenly.

Take out the pan and serve.
Tips:
After adding the potato shreds, stir fry quickly on high heat, and the stir-fry time should not be too long. It's best to shred potato shreds by hand, don’t use shredder tools, the frying taste is really different.
