Hot and Sour Potato Shreds

1. Shred potatoes, shred green peppers, and put the cut potatoes in clean water to wash away the excess starch.

2. Add water to the pot, add oil and 1 tablespoon of white vinegar to the pot, add shredded potatoes to blanch for 30 seconds after boiling.

3. Add oil in a cold pan, add dried chili and stir-fry until the color changes, add shredded green pepper, stir-fry potato shreds evenly over high heat, add 1 tablespoon of salt, 2 tablespoons of vinegar, and stir evenly.
Tips:
Potato shreds don’t need to be blanched for too long
