Hot and Sour Potato Shreds

Peel the potatoes, wash and rub them into silk, then wash off the starch and drain for later use.

Cut chives into sections, mince garlic, shred ginger, and cut millet pepper into circles for later use.

Add water to the pot and boil over high heat. Add the potato shreds and cook until the water boils again. Remove.

Rinse with running cold water until cool, and drain the water.

Add edible oil to the pot, add minced garlic and ginger to stir up the aroma.

Pour shredded potatoes and stir fry a few times.

Add salt and chicken essence and stir fry evenly.

Pour in a little vinegar.

Pour in 1 tablespoon of white vinegar and stir fry evenly.

Add the green onion and millet pepper, stir well and then turn off the heat.

Put it out of the pot and serve it to the table and enjoy.

Tips:
Don't use too much vinegar. If the color is too much, it will not look good. The cooked potato shreds must be cold water to be refreshing.
