Hot and Sour Potato Shreds

Peel the potatoes, clean and set aside

Cut the potatoes into shreds. I use a special tool to plan the potato shreds. If the knife is good, you can also cut it by hand.

Cut the shredded beans, use cold water to remove the starch, change the water several times, so that the fried potato shreds will taste crispy and not sticky

Wash like this until the water is clear, without any starch, then pick up and drain the water for later use

Cut the chili into shreds, chop the garlic into minced garlic, prepare the pepper

Put the oil in the hot pan. When the oil is warm, put the peppercorns in and fry the aroma, turn off the heat in about 10 seconds, then remove the peppercorns.

After removing the peppercorns, fire again and add salt

Add chili and minced garlic, stir fry for a fragrance

Pour shredded potatoes, stir fry over high heat, add white vinegar and sugar when fry is translucent, move fast

Then stir-fry evenly and put it on the pan.
