Hot and Sour Soup

Ingredients: tofu, shiitake mushrooms, eggs, vermicelli, soaked fungus, and shredded lean meat.

Shred the tofu, shiitake mushrooms, and fungus. Soak the vermicelli and cut into sections.

Mince scallion and ginger.

Beat the eggs into a bowl, stir well and set aside.

Wash coriander and cut into small pieces.

Add oil to the pot, add green onion and ginger until fragrant.

Add the shredded pork and stir fry until the shredded pork changes color.

Add shiitake mushrooms and fry until soft.

Pour in a bowl of broth and add water.

Add tofu, fungus and vermicelli after the water is boiled.

Pour in water and starch to thicken it to the desired consistency.

Add the very fresh soy sauce.
13.
Add salt to taste.

Add vinegar.
15.
Pour in the egg mixture and boil.

Add white pepper, chicken essence, coriander, sesame oil and stir evenly to turn off the heat.

Finished product.
Tips:
1. Pepper is the most important raw material, remember not to let the pepper "evaporate", it will become sour soup. The correct time to put it in is half a minute before turning off the heat.
2. The vermicelli should not be soaked too softly, because it has to be boiled in the pot.
3. I only put a bowl of bone soup, I am worried that the bone soup will be greasy. If there is no bone broth, it tastes good with water.
