The first step: boil the red oil. Preparation materials: 4/3 cups of chili powder, 1/4 cup of crushed chili (1 cup = 250 ml, the same below), 1 tablespoon of Chinese pepper, 3 cloves, half a strip of cinnamon, 1 small cumin Spoon, 1 grass fruit, 4 star anise, 3 bay leaves, 1 small piece of ginger, 3 pieces of green onion, 1 tablespoon of sesame seeds, 1 small piece of comfrey (the above ingredients are shown in the picture). Add 200 grams of skinless peanuts and 600 grams of salad oil (or vegetable oil).

Pour the oil into the pot, add peanuts when the oil is slightly hot, and fry with a slow fire until slightly yellow and crispy

Put the above-mentioned other ingredients (except sesame seeds) into the oil pan and turn to the minimum heat immediately. After boiling for 1 hour, add sesame seeds and cook for another 15 minutes.

Pour all the ingredients in the oil pan into a bowl.

After soaking for 1 day, remove the residue and drain the red oil. Save can be used multiple times.

Step 2: Prepare soy sauce. Ingredients: 1 cup of soy sauce, 3 tablespoons of soy sauce, 1 small piece of rock sugar, 3 tablespoons of brown sugar, pepper, star anise, cumin, bay leaves, ginger, and shallots. All the above materials are shown in the picture.

Put all the ingredients in a pot, turn to a simmer and simmer for 30 minutes after boiling.

Filter out the residue.

The soy sauce is stored in a container and can be used multiple times.

Step 3: Cook the beef offal and prepare the red oil juice to cover the offal. Add appropriate amount of cooking wine, salt, star anise, green onion and ginger to cook the offal until slightly rotten. You can cook the hard-to-cook parts such as beef tendon and beef tendon in a pressure cooker.

After the boiled offal is taken out and allowed to cool, cut into thin slices and place in a deep bowl.

Prepare the broth and season it with salt and chicken essence (I used the clear chicken broth which already has a taste)

Tips:
Do not add too much cloves when boiled red oil, because the taste is too strong. Lithospermum is mainly to increase the color, so you can leave it alone
