Improved Version of Simple Old Beijing Fried Noodles

First, dilute the dried yellow sauce with warm water. I didn’t add the sweet noodle sauce in the traditional way. It is easier to handle and the taste is authentic

Cut the pork into cubes. I didn’t choose the pork belly because I think the pork belly is a bit greasy to eat

Separate the fat and thin cuts of pork

Put oil in the pot, you can put less, because we can boil some lard with diced fat

When the oil is hot, pour in the diced fat and stir fry for the oil

Then pour in the diced lean meat, stir fry, sprinkle a little cooking wine and cook to remove the smell

Pour in the diluted sauce, add a little salt, and boil over medium heat

During the cooking process, stir in one direction with a spatula and add some sugar to remove the astringency of the yellow sauce

When the sauce becomes very thick, you can turn off the heat

Cut some shredded cucumbers to make dishes, or add bean sprouts and other seasonal dishes, it depends on personal preference
