Indian Chicken Curry (kurma)

All the ingredients are cut up (I forgot to put the millet pepper in the picture... but I added it to the pot.)

Cut potatoes into small pieces (depending on the size of the pot~)

Cut the chicken and put the sliced ginger on top.

Fry the chicken half raw with hot oil in the pan. The ginger slices remain in the pot, and the chicken is served in a bowl. (When frying chicken, don’t stir fry for the first 10 seconds)

In the same pot, add onions and sauté until fragrant.

Add appropriate amount of water and pour in curry powder. Boil the curry powder first, and add it after the water is not enough.

The curry powder used is this. I bought it for everyone, and it is available in China. (It doesn't matter if you can't buy it, just replace it with the most common Indian curry powder.)

Pour in the chicken, millet pepper and add water to the chicken. (Add a little more, there are also ingredients to put)

Put a piece of bay leaf, then pour coconut milk. (Any coconut milk will do, and coconut milk will do...) The green one is millet pepper...

If you want to burn the potatoes, you can put them after pouring the coconut milk. You can put it later if you don’t want to burn it.

Not spicy enough, add some chili powder. (If you don't like spicy food, you can omit it.) Then cook it on high heat for 10 minutes.

Add scallions and add fragrance. Cook for 20 minutes.

Put the green peppers. Cook for another 10 minutes. (Seeing that it's almost potato crispy!)

Add some soy sauce, salt, and sugar.

Here comes the point. This is fish sauce, add a little bit before it is out of the pot, the taste will be different!

Add some sesame oil and mix well.

Sprinkle some chopped green onions. Serve, start eating!
Tips:
1. I use an induction cooker, and I turn it on to the maximum fire during the whole process. If it is an open flame stove, just collect the juice and cook for 10 minutes on high heat, and use medium heat for the rest of the process. (Just watch the bubbling~)
Remember to keep flipping, otherwise the pot will be messed up!
2. Add more sugar, it's a bit like Japanese curry!
