Jin Yu Man Tang---steamed Egg with Shrimp

After removing the shrimp thread, knead the shrimp with 0.5g salt and rinse with water, drain the water, add starch, mix well and set aside
The internal fat tofu is changed into small pieces of eggs and beaten into a bowl. Add the remaining 0.5g of salt and beat into egg liquid. Add 90g of water and beat evenly.

Strain the egg liquid with a strainer and pour it into the tofu

Wrap the bowl with PE plastic wrap and put it in a steamer to steam over medium heat for 10 minutes

Remove the plastic wrap and put in the marinated shrimps and steam for 3 minutes

Pour in soy sauce, camellia oil and sprinkle with green onion and smooth shrimp and tofu steamed egg.

This bowl of steamed eggs with shrimps is absolutely tender. It is still trembling slightly when scooped up with a spoon.
Tips:
If you want to make an extremely tender custard, you must first use cold boiled water, secondly use a strainer to block the bubbles, and finally choose medium heat during the steaming of the eggs.
