Prepare the necessary ingredients

Cook the salted duck eggs first

Take out the egg yolk and crush it with a spoon (I directly crushed it by hand)

Lactone tofu cut into small pieces

Prepare chopped green onion and minced ginger

Pour 5g of cornstarch into appropriate amount of water and stir evenly

In a frying pan, sauté the chopped green onion and minced ginger over medium and small heat

Pour in salted egg yolk and stir fry for a while

Add 3g light soy sauce and stir well

Pour in a small pot of water

After the water is boiled, add the tofu and push it a few times with a spatula

Simmer for two minutes and turn to low heat, sprinkle some white pepper, then slowly pour in the water starch, and gently push the tofu with a spatula to make the soup slightly viscous. Put it in a bowl and sprinkle with chopped green onion. Let's eat
Tips:
1. Since the egg yolk is relatively salty, there is no salt in this dish. If you think it is not salty enough, you can add it according to the situation.
2. The lactone tofu is very tender. If you treat it like a usual stir-fry, it will be fry.
3. Be sure to stir evenly again before pouring the starch, otherwise the starch will settle on the bottom, and the top will be clear water.
