Juicy Peach Soft European
1.
First prepare the old noodles: knead all the ingredients into a dough, ferment at room temperature for one hour, and then refrigerate for one night! This portion is a bit large, it can be stored frozen, and itβs ok to take it out and reheat it next time. The yeast is dissolved in 25g of water, and then in the order of liquid first, powder second, put all the ingredients into the bread bucket, and turn on the kneading process for 15 minutes!
2.
The raisins are soaked in rum or red wine for about an hour.
3.
Just knead the dough until it becomes smooth and the film can be pulled out!
4.
Take out the dough and leave it in plastic wrap for 30 minutes at room temperature.
5.
Press and exhaust the dough, divide it into 3 portions, roll it round, cover with plastic wrap and relax for 20 minutes! When we relax the dough, we peel and dice the peaches, dry the raisins with kitchen paper, and weigh the cream cheese for later use!
6.
Take a dough and roll it into an oval shape (you can sprinkle some flour on the mat to prevent sticking), and first evenly spread a third of the cream cheese...
7.
Spread one third of the diced peaches and raisins (not too much, or there will be holes in the middle).
8.
Then slowly roll up from bottom to top into a long stick shape and put it on the baking tray! The final fermentation is carried out at a fermentation temperature of about 27 degrees, 40 minutes!
9.
Preheat the oven to 200 degrees and place a baking tray on the bottom! Then brush a thin layer of egg liquid on the surface of the bread, and use a knife to make 3 cuts on the bread (not too shallow) and sprinkle with almond slices!
10.
Put the dough in the middle layer, then pour a bowl of water in a baking tray below, quickly close the oven door, and bake at 200 degrees for about 20 minutes. A bowl of water is added to create steam, which makes the bread shiny!

very hungry!
Tips:
1. Soak raisins in rum or wine for at least one hour!
2. There is not much sugar in this bread, so use low-sugar yeast!
3. It is best to use harder peaches. If there is a lot of water, take kitchen paper to absorb the water!
