Jujube Bean Paste Mooncakes

The red beans are cooked, the dates are steamed to remove the pits, and then put in a food processor and crushed with an appropriate amount of water. Pour into the pot and stir continuously. Add appropriate amount of oil and sugar, and fry until it does not stick to the pan.

After frying and cooling, divide into equal parts as needed for later use

Pour invert syrup, peanut oil, and soap into a container

Stir well and set aside.

Add the sifted flour and mix well

Stir until the dough is fine and non-stick gloves

Wake up in the fresh-keeping bag for about two hours

Divide the awake dough into small portions as needed, and knead the jujube paste and bean paste into a ball as needed

Take a portion of the pie crust and press flat

Slowly push up the dough with a tiger’s mouth

Roll on the right amount of starch

Preheat the oven up and down at 200 degrees, lightly spray water before the mooncakes are put into the oven to prevent the mooncakes from cracking, do not spray on the mooncakes, do not spray too much

Take it out in 7 minutes. The surface of the mooncake is already dry. Cool it slightly until it is not hot. Brush a layer of egg yolk water, and then apply another layer after the surface of the first layer is dry. Bake for another 10 minutes until the surface of the mooncake is evenly colored
Tips:
1. I wake up for a long time for the dough. The dough made up in the morning is put in the refrigerator at night.
2. Egg yolk water One egg yolk plus one spoonful of water, about 10g
3. Use a brush. The silicone brush is not easy to use. When brushing, the brush is stained with egg yolk water, and the excess egg yolk liquid should be taken out by the side of the bowl.
4. I made 10 pieces of this dough using a 50g moon cake mold, 18g of skin and 32 grams of stuffing
5. The steps of preparing the jujube paste and bean paste were done by my dad with help. I took over the frying stuffing after breaking it up, so the diagram of the steps is not complete, so I will make up the shot next time I make it myself.
