Jujube Soy Trotter Soup

Split the trotters in half from the middle.

Put the chopped trotters into a pot, add 2000ml of water, green onion and ginger slices, cover and bring to a boil.

After boiling, skim off the foam.

Pour all into a casserole, cover and simmer for 1 hour.

Then add the jujube and soaked soybeans, continue to simmer for 3 hours on low heat, and sprinkle 3 teaspoons of salt to taste.
