Kelp Soup

Prepare dried kelp and pork bones

Add 1 tablespoon of white vinegar to warm water, put the dried kelp in it, it will be soft after about 1 hour; then put 1 tablespoon of flour and knead it with your hands for 1~2 minutes, then rinse with water

Cut into small wide strips, use 1 teaspoon of salt repeatedly to scratch and wash

Put the kelp and appropriate amount of water in the pot and boil it over high heat, then remove the kelp and wash it; after these 3 steps, the kelp can be thoroughly washed, the fishy smell is gone, the mucus is less, and the taste will be more crispy and refreshing.

Soak the tube bones in water for a while, then put them in the pot, add water and a spoonful of cooking wine to remove the smell, boil it on high heat and remove it and wash it.

Put the tube bones into the pot again, add the shallots, ginger slices and appropriate amount of water, and cover the high heat

After boiling, add the cooking wine to remove the fishy smell and enhance the aroma, and then skim the surface foam and green onions.

Turn to low heat and continue to cook for about 40 minutes, until the chopsticks can be smashed.

At this time, add the kelp, turn to low heat after boiling, continue to boil for another 10 minutes

According to the taste of the family, add the right amount of salt to taste

Finally add dried shrimps, goji berries and chopped green onion, cook for 1 minute and then turn off the heat
Tips:
1. Dried kelp needs to be soaked in advance. If you want to soak for a short time, you can use warm water and white vinegar. It can be soaked in about 1 hour.
2. Bone bones must be blanched before boiling the soup to remove blood and impurities, so that the soup will be more refreshing and delicious.
3. When boiling the soup, you can pour more water, try not to add water in the middle; and don't add too many spices and ingredients, which will affect the taste of the soup and destroy the nutrition of the soup itself.
