Kung Pao Tofu

Wash the peanuts and drain;

Cold pan with cold oil, pour in peanuts, fry on low heat until there is a uniform cracking sound, remove.

Cut old tofu into pieces, the size depends on each person's preference;

Heat the oil to 50-60%, add the tofu cubes, deep fry until the skin is hard, and remove.

Cut ginger, green onion, and garlic into pieces.

Add starch, sugar, monosodium glutamate, soy sauce, vinegar and water to make a juice.

Heat oil on low heat, add dried sea pepper and Chinese pepper to fry until fragrant;

Add ginger, garlic, and tofu cubes and stir well;

Pour in the juice and stir fry quickly over medium heat;

Add peanuts and green onions;

Stir-fry over high heat, collect the dry juice and serve.
