Laba Congee

First of all, we have to prepare the ingredients needed to make [Laba Congee]. Although the name is Laba Congee, it does not have to be made with eight specific ingredients. It is enough to mix and match according to the existing grains in your family. I prepared eight kinds of ingredients: rice, millet, red beans, red dates, red peanuts, lotus seeds, longans, and walnuts based on the inventory at home.

Soak the hard ingredients such as red beans and lotus seeds in advance with water. Then peel the walnuts and take out the walnut kernels. After the longan is peeled, take out the longan meat, and cut the red dates with a knife to remove the jujube cores.

Wash the walnuts, longan meat and red dates to remove impurities, and then wash the soaked red beans, lotus seeds, rice, millet, and red peanuts together.

Put all the ingredients in a casserole, add 1800ml of drinking water, boil on high heat and turn to low heat to simmer for about 1 hour. Use a spoon to stir in the middle to prevent sticking to the pan.

Watching the various ingredients in the casserole slurp, cook until the rice grains bloom and become soft and waxy, the beans are crispy, and the porridge becomes thicker and thicker. If you like to drink sweet porridge, you can also add some rock sugar to taste.

1. The ingredients for Laba Congee can be matched according to your own eating habits. If you don't want to bother, the supermarket will have a good Laba Congee rice every year near the Laba Festival, so you can buy it directly.
2. Beans are harder and not easy to cook. It is best to soak them in advance before cooking, which can greatly save the time for cooking porridge.
3. If you like to drink sweet porridge, you can add some white sugar or rock sugar to taste. In fact, you can leave it alone. The red dates and longans taste very sweet, and the sugar-free original taste is healthier.
