Put the lamb in the pot and stir-fry it to change its color. Add the spices together. Because this lamb leg is a bit fat, I didn't add extra oil to stir-fry it.

Stir fry the lamb out of oil

Add cooking wine, light soy sauce, oyster sauce, dark soy sauce, salt and stir fry evenly. Add the seasoning according to the amount of lamb

Pour the meat into the casserole, add water to submerge the lamb

Simmer on low heat for an hour and you can eat it
