Lame Claypot Rice

600g rice for five adults and one child

Wash and soak the rice for 30 minutes with the amount of water that has not been used for the rice

The bacon and cured duck legs are watered to remove surface impurities and the peculiar smell of cured duck legs

Dry the rice and stir-fry in the pan until slightly dry

Pour the fried rice into the pot and add the water for soaking the mushrooms. The amount of water is suitable for the rice. I started to simmer on a low fire. I used a cast iron pot and used a low fire all the way.

When the rice is simmered until the water is almost invisible, add all the wax and other ingredients (except the sauce), cover the pot and continue to simmer. During this process, the position of the pot should be adjusted frequently to achieve even heating.

The rice is simmered for about 20 minutes, and it's OK to pour the sauce before it comes out of the pan.
