Lame Claypot Rice
1.
This picture shows that I have oiled the bottom of the pot and poured the soaked rice into the casserole. Generally speaking, it takes 30 minutes to soak the rice. If you think it takes too long to come back from get off work, you can soak the rice in boiling water for 15 minutes! You can see that the rice has been soaked and expanded, and the water has absorbed a lot!
2.
What should be noted in the previous step is that the ratio of rice to water is not very accurate. According to your own personal preferences, you can put more water if you like soft spots, and submerge the flat rice 1-1.5 cm, like If it's harder, it's 7-9 mm! As shown in the picture, cut the wax, ginger, and shiitake mushrooms soaked in water to soften the hair, cross and cut!
3.
The bottom of the casserole, including the sides, should be painted with a layer of oil, so that the rice does not stick to the pan easily, and the excess oil is poured out. Don't leave a little oil in the pan like the one in my picture, just a little bit!
4.
I didn’t take pictures in this step. I just cook it slowly for 10 minutes on medium and low heat. Some water may spurt out in the middle, but remember not to open the lid. This will happen when the water is boiled. Just turn down the ignition power slightly. It's okay, but remember to adjust the firepower back! At this time, you can take out the boiled green vegetables for later use!
5.
After 10 minutes, start to put in the cured meat, shiitake mushrooms, boiled vegetables, shredded ginger, and beaten an egg into it!
6.
Put all the ingredients in, simmer for 5 minutes on low heat! Turn off the heat and wait another 5 minutes, that's it! During this time, you can get a small pot of soy sauce yourself! Turn on a small fire, put some water in the pot and pour light soy sauce, oyster sauce, a little cooking wine, brown sugar or white sugar, you can season it according to your own taste!
7.
It's ready to be out of the pot at this time, topped with a layer of soy sauce made by yourself! Give it a stir, start!
Tips:
How much water and heat are added to this is very important! The first time you may not be very skilled, the second time you will know how to handle it!
