Lanzhou Ramen belongs to the category of noodle soup. Light, refreshing, affordable and inexpensive. The biggest secret of Lanzhou Beef Noodles is the soup. The so-called clear soup is not boiled water mixed with salt, but dozens of condiments and beef stock. There is a bowl of fragrant beef broth, it doesn't matter if you can't ramen. Stay away from the noodle soup, and follow the West Malaysia to give you a rich, mellow, fragrant beef noodle.

Lanzhou Beef Noodle

1. Prepare beef and beef bones, then soak them in water for four hours (the water needs to be changed halfway)

2. Wrap star anise, cinnamon, bay leaves, pepper, dried chili, grass fruit, nutmeg, cumin, cloves and green onions, and ginger with gauze to make a seasoning bag

3. Put the beef and bones in a pot of warm water, and skim the foam when it is about to start

4. Add the seasoning bag to a boil on high heat, turn to low heat and cook for 5 hours, remove and let cool, cut into small slices for later use

5. Stir the flour with water until there is no dry surface, then knead evenly until it becomes a smooth and non-sticky dough, 饧 to 20 minutes

6. Take a piece of dough and knead it into a strip and stretch it fully

7. Fold both ends in half and repeat several times

8. Roll into slices, cut into strips, and pull into noodles one by one

9. Cook in a pot of boiling water

10. Put it in a big bowl and pour beef broth

11. Add beef slices and coriander

12. Add red oil according to your preference
